harvest apple nut bread

2-1/2 cups all purpose flour
1 cup oats, uncooked
1/2 cup chopped nuts
1 tablespoon baking powder
1-1/2 teaspoons cinnamon
1 teaspoon salt
1/4 teaspoon nutmeg
1-1/4 cups packed brown sugar
3 eggs
2/3 cup vegetable oil
1 teaspoon vanilla
2 cups shredded apple (about 3 large apples)

Heat oven to 325. Grease bottom only of a 9 x 5 inch loaf pan. In medium size bowl, combine flour, oats, nuts, baking powder, cinnamon, salt and nutmeg. In large bowl, combine sugar, eggs, oil and vanilla; mix until smooth. Stir in apple. Add flour mixture, mixing just until dry ingredients are moistened. Pour into prepared pan and bake about 1 hour and 10-15 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire cooling rack.
