pineapple carrot cake

1 cup oil
1-3/4 cups sugar
3 eggs
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons vanilla
1 teaspoon salt
2 cups grated carrots
1 cup chopped nuts
1 small can crushed pineapple and juice
1 can of coconut flakes

Combine the oil in a large bowl with the other ingredients. Mix with a wooden spoon. Do not use the mixer. Baked in greased and floured tube pan at 350 for 50 minutes or until done. From Mary Albert.
